Quick Note: Cooking with Beer
The first principle to keep in mind is that the higher the heat and
the longer the cooking the more the alcohol content will diminish. So keep this in mind when starting to introduce
beer into your cooking. Also the hops content is a major factor when reducing
beers to concentrate the flavours. I find adding some of the fresh meat
trimmings into the beer before you reduce it helps balance the bitterness, but
choose a beer with a modest hops level, such as Nirvana Pale Ale.

Matching Beer & Food
"Beer: It's not
just for breakfast anymore." Beer can be used to complement any meal of
the day. While there are no hard and fast rules about matching beer
with food, there are some guidelines that can make the experience more
enjoyable.
