Quick Note: Cooking with Beer
The first principle to keep in mind is that the higher the heat and the longer the cooking the more the alcohol content will diminish.  So keep this in mind when starting to introduce beer into your cooking. Also the hops content is a major factor when reducing beers to concentrate the flavours. I find adding some of the fresh meat trimmings into the beer before you reduce it helps balance the bitterness, but choose a beer with a modest hops level, such as Nirvana Pale Ale.
